Cooking for a Bachelor

My dad is a Bachelor. He doesn't really cook. The most he does in the kitchen is make fresh coffee and breakfasts that usually consists of eggs, bacon or ham, and maybe french fries if he has some. A little over a year ago Abuela ended up living with him; up until she passed away right before this last Thanksgiving. While she was living with him the woman, an EXCELLENT cook, made sure the man was well fed. You know, like any Abuela tends to do. Fatten you up for the slaughter.

Sanco-what?!

This is goooooood. Finger-licking good. Comfort food good. Warm my toes from the nasty weather good. Grow hair on your bare chest good. Well, I don’t need that. And I don’t have any nasty weather, I am in The Caribbean. 😉 But it’s still goodness to the last spoonful.

Here is my infamous (as in the 8 people who have tried it love it) concoction I call Sancochao. It’s sorta like a Sancocho, but instead of doing the usual Sancocho & White Rice combo, I add rice to the Sancocho-like soup and turn it into an Asopao. A Sancocho Asopao of sorts. Not only do I save time by not making rice, but also I think it adds to the yum and hearty factor. You can call it Sancocho, Asopao, Sancochao, Asococho. Call it whatever you want. But the point is, it’s delicious.

Cocinando: All’Amatriciana

We LOVE Bucatini all’Amatriciana. We love it so much we’d bathe ourselves in it. Really.

We first had it at Mario Batali’s Lupa in NYC. It was, to say the least, one of the most bangin’ pasta dishes we’ve had! (Next to our own creations. Of course.) To this day it’s one of our favorite pastas, along with Carbonara, Lasagna, and all those other low-cal, low-fat pasta dishes the world has to offer.

Cocinando: Got Some Extra Butt?

So what to do with such a large butt? And you do know I mean the pork butt we smoked a while back, right? ‘Cause let’s not get personal and start judging each others’ butts. That’s an entirely different blog buddy!

So one way to improvise and take leftovers and kick ’em up a notch (unintentional ode to Emeril there) is by doing what we like to do every now and then with chili and other toppings; we make LOADED POTATOES.

Cocinando: Smoked Butt

Our butt smokes. Or do we smoke butts. Ha! Ha! Get it? Okay. Guess not.

At our second BBQ Smoking session, moncheoPR smoked a Pork Butt, some Beef Ribs, and baked beans. The beans?!?! Why not? Give us fruit and we’ll smoke it. Water? Sure, why not?! Hell, we want to smoke Ice Cream base and see if it works.

Cocinando: Father’s Steak

Last Sunday was El Día de los Padres (Father’s Day). moncheoPR decided to cook for dad. It was the easiest gift we could think of. Besides, he had been asking for us to cook something. Anything. So we caved in. Oh, and moncheoPR mom came along for the ride. They’re a combo deal. You can’t have one without the other, right? Thinking about it, this was sort of Mami’s Mother’ Day Gift as well. Oops!

smoking? Hmmm…

 

moncheoPR recently got a
smoker/grill and made some sweet and smokey love to some baby back
ribs, chicken, and corn. This event took over 2 whole days of our
lives, but the end results were AMAZING if we do say ourselves.
